cupcakes for hong
well i tried to make some super yum cupcakeys for my awesome friend Hong but I had no cocoa… so I tried my best to make do with what random ingredients I had… so I found this recipe on epicurious and modified it a tad. The original recipe calls for 200grams of chocolate all up.

100g Guylian seashells, chopped
100g Cadbury milk chocolate, chopped
170g unsalted butter, cut into pieces
1 1/2 cups strong brewed coffee
5 tablespoons bourbon (preferably 80 proof)
2 large eggs, lightly beaten
1 teaspoon vanilla
2 cups high grade flour
1 3/4 cups sugar
1 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 140°C.
Prepare cupcake pans and one spring form pan (original recipe calls for 2 7 inch spring form pans, I used one and a tray of 12 cupcake pans).

Melt chocolates and butter with coffee in a big saucepan over moderately low heat, stirring constantly until smooth. Remove from heat and cool 10 minutes. Beat in bourbon, eggs, and vanilla. Sift in flour, sugar, baking soda, and salt and stir until batter is smooth (batter will be thin).

Divide batter between springform pans and cupcake tins (fill cupcakes first). Bake cake in middle of oven 1 to 1 1/4 hours, and cupcakes 30 mins or so. Watch carefully after 20. Remove from oven and cool in pans on racks 20 minutes.

The cake tasted much better than the cupcakes. I also iced with some really gross raspberry icing which I attempted to make red but never got there, and had some fresh raspberries beat into it.
