This cake is dense, moist, nutty and fruity, thanks to the fact it is made with no flour, 3 whole oranges and ground almonds. Grind your own in a food processor with a little sugar or buy pre-ground.

Orange Almond Cake
3 Oranges
6 eggs
2 1/2 cups ground almonds (or 4 x 70g packs of ground almonds)
1 1/2 cup caster sugar
1 teaspoon baking powder
superfine/icing/confectioners sugar for dusting
Preheat oven to 180 degrees Centigrade or 350 degrees Fahrenheit. Grease and line 2 x 8″ tins or a 9″ spring form tin, or whatever you feel like.
Poach (cover orange in water, bring to boil and then simmer) whole clean oranges in water in a small saucepan.
Once they are “knife tender” then remove any seeds and pith from the center of the orange stem and put into food processor.
Process until pulpy then add remaining ingredients and mix until combined.
Bake for about 50 minutes, or until a skewer inserted comes out clean.
Serve with thick Greek honey flavored yogurt or cream, or just enjoy sprinkled with icing sugar.

Hi, no, don’t peel just wash them well and remove any stickers/labels. Then stick the whole oranges into the water. You use all of it, why it tastes so great!!

Approximately how long does it take to poach the oranges?
about half an hour. you just want to do it until you can easily poke a knife through the skin.
