- 420g of microwaved pumpkin, blended
- 375g canĀ Sweetened Condensed Milk
- 2 eggs
- 2 g ground cinnamon
- 1g ground ginger
- 2 g ground nutmeg
- 3 g salt
- Pie crust (I made my own)
- Preheat oven to 220 degrees C (425 degrees F). Whisk everything together in medium bowl until smooth. Pour into crust. Bake 15 minutes.
- Reduce oven temperature to 180 degrees C (350 degrees F) and continue baking 35 to 40 minutes or until knife inserted 1 inch from crust comes out clean. Cool. Garnish as desired. Store leftovers covered in refrigerator.

1 cup flour
1 tsp baking powder
1 cup brown sugar
1 cup dessicated coconut
125g butter (melted)
1 can (375g) sweetened condensed milk
2 tablespoons golden syrup
30 grams butter
150g chocolate
preheat oven to 180 degrees centigrade.
combine first 5 ingredients and mix well. press into a lined 20x25cm pan or similar and bake for 10 minutes or until lightly golden.
heat next 3 ingredients in a saucepan, bring to boil and stir for 5 minutes trying not to burn it.
pour over the base and bake for a further 10 minutes.
remove from oven and cool. melt chocolate and pour over the top, smoothing evenly. cool and cut.

This cake is dense, moist, nutty and fruity, thanks to the fact it is made with no flour, 3 whole oranges and ground almonds. Grind your own in a food processor with a little sugar or buy pre-ground.

Pecans and Butterscotch have never really appealed to me, but somehow this recipe did…


I have never ever made a cheesecake before, shock horror, and so I have no idea whether or not this is going to set. Not only that, but I screwed up my oven timer melting butter for the banana cake I was making simultaneously and so I have no idea how long I baked it for. Stay tuned for is it set… /edit: it set perfectly

250g softend butter
1 tsp vanilla extract
3/4 cup caster sugar
3/4 cup brown sugar
1 egg
2 cups plain flour
1/4 cup cocoa powder
1 tsp baking soda
400g any kind of chocolate chopped up.
preheat oven to 180 degrees and line oven trays with baking paper
beat butter/sugar/vanilla/egg with eletric mixer until light and fluffy.
stir in flour, cocoa, baking soda. stir in chocolate
roll tablespoons of dough into balls and place 5cm apart on trays, bake about 12 mins and cool on trays.
variations: add a handfull of sliced toasted almonds and 1/3 tsp almond extract.
